Ok, I simply find this fascinating!  Two different studies, one in the United Kingdom and one in Spain, found a link between people who eat fast food and depression!  You ARE what you eat! If you put crappy food into your body, you get crappy results.  What is so fascinating to me is that there appears to be a correlation with mental health, not just physical health.

Professor Sanchez-Villegas with the Spanish University of Las Palmas de Gran Canaria, found that

“participants with an elevated consumption of trans-fats presented up to a 48 percent increase in the risk of depression when they were compared to participants who did  not consume these fats.”  The researchers in London found that participants whose diet was high in saturated fats and processed foods were at a 58 percent higher risk of depression.

48-58%!!! That is HUGE!

Cocoa Flavanols Improve Eye & Brain Function, Study Says

Having grown up in a family with a medical doctor who was always on the cutting edge in his field, I have always had a fascination with research behind why things work in our bodies.  There is so much interesting research on cocoa flavanols out there.  One recent study from researchers at the University of Reading claims that consuming cocoa flavanols may improve certain aspects of eye and brain function.

It is important to know that cocoa is extremely high in flavanols, which has documented health benefits.   The authors of this particular study, which can be found in the journal, Physiology & Behavior, concluded that “this is the first report of acute effects of cocoa flavanols on the efficiency of visual function.”  The researchers believe that these effects may be explained by “increased cerebral blood flow caused by cocoa flavanols, although in the case of contrast sensitivity there may be an additional contribution from cocoa flavanol-induced retinal blood flow changes.”  The researchers found that cocoa flavanols improved visual contrast sensitivity and reduced the time required to detect motion direction.  They stated, “A reduction in the time required to integrate visual motion could be beneficial in time critical everyday tasks, such as driving.”  Cocoa flavanols increased response speed in simple tasks.

The answer to me?  Eat more chocolate!  Healthy Chocolate, that is.

Xocai Oatmeal Cookies

On our recent road trip to Birmingham, Alabama, Libby Patrick and I presented at a Chocolate Tasting with Lee Reich’s team.  We met so many awesome people who are interested in antioxidants/health and wealth in Birmingham!  They served strawberries drizzled with melted Xocai Nuggets and the most AMAZING oatmeal shortbread cookies with Xocai Power Squares as the chocolate chips.  I just wanted to share that recipe with you in case you want to try them.  They melt in your mouth!

OATMEAL SHORTBREAD with Xocai Power Squares

2 sticks unsalted butter at room temperature
1/2 cup light brown sugar
2 cups old-fashioned rolled oats (not instant)
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped Xocai Power Squares

1.  Place the butter and sugar in the bowl of a mixer fitted with a paddle and mix until creamed.
2.  Add the oats, flour, baking soda, salt and chocolate and mix until just combined.
3.  Divide dough into three parts and roll each part into a log on a sheet of wax paper.
4.  Shape each log in a circle, oval or square.  Wrap and/or roll each log in wax paper, place in an airtight bag or container and refrigerate overnight (or several hours or several days).
5.  Preheat oven to 350 degrees.
6.  Slice cookies thin and bake on parchment paper lined cookie sheets, 12 to 15 minutes, until the edges are golden brown.
7.  Cool on the cookie sheet and store in an airtight container for up to 2 weeks.
Note:  The cookies freeze well.

Lose Inches Around the Middle Without Trying? Priceless!

Caroline King here, sharing a little about the Xocai High-Antioxidant Protein Shake.  As you hear in the video, I have to go shopping!  None of my clothes from last summer fit me anymore!

I drink one shake a day for breakfast, mostly for the health benefits that are a byproduct of ingesting so many antioxidants first thing in the morning.  My favorite way to drink it is with 8 ounces of unsweetened vanilla almond milk, 2 scoops of the high antioxidant protein shake powder, 2 small spoonfuls of raw coconut, 5-6 almonds, 5 pieces of ice and blend it up in a blender.  It tastes like an Almond Joy – it’s AMAZING!!!  I have never felt better and without trying, I am losing those dreaded inches around my middle that will not go away no matter HOW many sit ups I do.

Healthy Chocolate Power to Help CURE Childhood Cancer

Press Release- April 29, 2011 – ATLANTA, GA

The Xocai (“show-sigh”) Atlanta Healthy Chocolate Team is rallying to help find a CURE for childhood cancer by participating in Lauren’s Run on Sunday, May 1, 2011.  Many on the Atlanta Xocai Team have been touched by cancer, and some by childhood cancer.  Libby Patrick, a Xocai distributor, is a childhood cancer survivor.  Caroline King’s niece, Florence White, is a two-time childhood cancer survivor.  Many people have been touched by cancer, but it is especially devastating when a child is diagnosed with the disease.

The Xocai Atlanta Team’s efforts to raise awareness and money for childhood cancer research is led by Tricia Holder.  She said, “We believe strongly in giving back to the community and are excited to have a team participating in Lauren’s Run.”   All of the money raised goes directly to researching childhood cancers.

The survival rate for children with cancer has increased dramatically to its current rate of nearly eight out of ten. Best of all, researchers feel they will discover a cure in our lifetime. CURE’s mission includes funding important research and providing support programs to help children and their families deal with this dreadful disease.

Yes, It Grows On Trees (Just Not Around Atlanta)!

Atlanta MLM Secrets Think about the last time you got to enjoy chocolate while out and around Atlanta. Perhaps it was a chocolate milkshake at a Metro Atlanta restaurant. Maybe it was a Snickers bar you picked up at a Georgia 7-11 whose wrapper is still stuffed in a cup holder in your car. It could have been a chocolate chip cookie still warm from the oven.

Whatever it was, did you pause to think about where the chocolate came from? Though it seems to come straight from heaven, chocolate is actually produced from cacao, a plant-based food. Just like peaches, almonds, and bananas, cacao is a natural substance that comes from a tree. Technically, cacao is a fruit.

The theobroma cacao is an equatorial tree whose fruit is shaped somewhat like a football. These color of the pods range from a purplish-brown to a golden shade and can grow to over a foot long.
